Here's what you need:
- 1 1/2 cups flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1 stick melted butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 1/2 cup peanut butter
- 1 egg
- 2 tablespoons milk
- 1 teaspoon vanilla
- 3/4 cup powdered sugar
- Preheat oven to 350 degrees F. Set parchment paper on a baking tray, and set aside. In a medium sized mixing bowl stir the flour, cocoa powder, and baking soda.
- With an electric mixer on medium, beat the butter, granulated sugar, brown sugar, and a 1/2 a cup peanut butter until smooth and creamy. Add the egg and beat well.
- With mixer on low slowly add in the flour mixture alternating with the milk. Stir until combined
- Roll the dough into balls about 1 1/2 inches. Place them onto the baking sheet, and slightly flatten them.
- With an electric mixer, beat the remaining 3/4 cup peanut butter and powdered sugar together until firm. Roll into balls of about 3/4 inches.
- Put each ball into the middle of the chocolate cookie, and wrap the chocolate dough around the peanut butter, making sure not to crush the peanut butter in the middle.
- Bake for 8-15 minutes, or until a knife comes out clean when inserted into the middle of the cookie.
